Ham and broccoli bake

Preheat oven to 190℃

PROCESS


To a pan over medium heat, add half the olive oil, onion and garlic and cook for 4-5 minutes until the onion is translucent. Add in the broccoli and cook for 1-2 minutes to help soften the florets then turn off the heat.


Grease the bottom of a deep baking dish with the remaining olive oil and transfer the broccoli mix into the dish with the ham and spread it out evenly.


In a separate bowl add the milk, eggs, Parmesan cheese, salt and pepper and whisk to combine. Pour this mix over the broccoli and ham and then top with the pine nuts.


Transfer the dish to the oven and bake for 25-30 minutes or until a light golden colour forms.


When ready, remove from the oven and allow to cool for 5 minutes before serving.

INGREDIENTS


2 tbsps olive oil

1 small onion, finely chopped

1 clove garlic, minced

3 cups (75g) broccoli florets

2 cups (270g) diced ham

1 cup (250ml) unsweetened almond mill

4 eggs

1/2 cup (50g) grated Parmesan cheese

Salt and pepper to taste

2 tbsps pine nuts
